Paneer Kadhai

Paneer Kadai in Marathi

Ingredients:
250 gram Fresh Paneer
2 cup Onion, sliced lengthwise
1 tbsp Ginger paste
1 tbsp Garlic paste
1 and 1/2 cup Tomato Puree
1 tbsp Red Chili Powder
1 tsp Garam masala
2 tbsp Oil
2 dry Red Chilies
1 Bay leaf
1 Cinnamon stick (1 inch)
5-6 Black Pepper corn
1 tsp Coriander Seeds
2 Cardamom pods
3-4 Cloves
1/4 cup Cilantro, finely chopped

Method:
1) Heat Oil in a wok. Then, one by one add Red Chilies, Bay leaf, Cinnamon, pepper corn, Coriander seeds, Cardamom, and Cloves. Stir over medium heat until you sense the aroma. Then add chopped onion and ginger-garlic paste. Also add salt to taste.
2) Saute Onion until translucent, then add tomato puree, red chili powder and Garam Masala powder. Stir well. Let it cook for couple of minutes over medium heat. Add Paneer cubes and cook for 2 more minutes. Be gentle while stirring, otherwise Paneer can get crumble in the curry.

Note:
1) If Paneer is frozen, shallow fry before adding into curry.
2) Whole Garam Masala (
Bay leaf, Cinnamon stick, Pepper corn, Coriander Seeds, Cardamom pods, Cloves) makes this dish more flavorful. However, if you don't have whole coriander seeds and pepper corn, you can use coriander powder and pepper powder instead. Use them in the gravy.
3) If you don't have any of the whole garam masala ingredients, use little extra garam masala powder.

Veg Paneer Makhanwala

Veg Paneer Makhanwala in Marathi

serves: 3 persons

paneer makhanwala, North Indian recipes, Paneer vegetable curry, Indian spicesIngredients:
½ cup Paneer Pieces
¼ cup Green beans (1/2 inch pcs)
¼ cup Carrot, small cubes
¼ cup potato, peeled and cubed
¼ cup Cauliflower pieces
½ cup onion cubes
3 tbsp Green peas
1 cup Tomato cubes (peeled)
1 Tbsp Tomato Paste
½ tbsp Cumin seeds
½ tbsp Red Chili Powder
½ tsp Garam masala
1 bay leaf
1½ tbsp Milk
1½ tbsp Butter
2 tbsp Ghee
Salt to taste

Method:
1) Heat 2 cup water in a saucepan. Add Green beans, Carrot, Potato, peas and cauliflower. Put a Bay leaf in the water to give nice flavor to vegetables. Stir and let the vegetables cook until tender. Reserve remained water for further use. Remove the bay leaf.
2) Blanch two tomatoes, remove skin and make small pieces of tomatoes.
3) Heat a nonstick pan, add Ghee and let it melt. Add Cumin seeds and onion, saute until onion becomes translucent. Add Garam Masala and give a nice stir.
4) Then add blanched Tomato pieces. Let it cook until the mixture leaves butter.
5) Add cooked vegetables, reserved water, tomato paste, salt and Chili Powder. Stir nicely.
6) Turn heat on medium low. Add Milk, butter, Paneer pieces and mix very gently. Cover pan with lid and let it cook for 5 minutes.
Serve hot with Chapatti, Naan, or Roti.

Mexican Rice

Mexican Rice in Marathi

Serves: 2 persons

Mexican Rice recipes, Bean Rice, Spanish Food, Tex mex food, corn and bean rice
Ingredients:
White Rice 1/2 cup
3 cup Vegetable Stock
Ghee : 2 tbsp
Garlic Paste : 1 tbsp
Onion : 1 cup
Bell Pepper: 1/2 cup
Red Chili Powder: 1/2 tsp
Tomato : 1 big
Cabbage : 1/2 cup
Green Onion : 1/2 cup
Dried beans : 1/4 cup (OR 1/2 cup canned beans)
Boiled Corn : 2 tbsp
Salt to taste
Bat leaf 1
Grated cheese (Optional)

Method:
1) Soak 1/4 cup Dried Red Beans in water for atleast 6 to 7 hours. Pressure cook to 2 to 3 whistles. Do not overcook, otherwise beans could crack and will not taste good. Beans should be cooked properly without cracking. (You can use 1/2 cup Canned Beans instead)
2) Wash Rice and drain. Bring vegetable stock to boil. add washed rice, little salt and a tsp Oil. Stir nicely. Once rice is done, drain water and spread in a plate. Let it cool down.
3) Blanch Tomatoes and remove the skin and seeds. Chop blanched tomatoes to very small cubes.
4) Heat 1 tbsp Ghee in a non-stick pan. Add Bay leaf and Garlic paste, saute for few seconds. Put some Red Chili Powder and Onion. Saute for 1/2 minute and add Bell pepper cubes. Once Bell Pepper is half done, add tomato and saute for couple of minutes. Remove the Bay leaf.
5) Now put cooked beans and Corns, stir for 30 to 60 seconds. Add cooked rice and toss over high heat. Add salt if needed.
6) Add little Cabbage and green onion saute for 10-15 seconds. Transfer to serving plate, Garnish with grated cheese and green onion.

Bharwa Bhindi [stuffed Okra]

Bharli bhendi, Bharwa bhindi fry masala, quick and easy bhindi recipe, stuffed okra recipe
Ingredients:

25 No. Baby Okra
1/2 cup Onion, sliced lenthwise
1 tbsp Cumin Powder, 1 tbsp Coriander Powder,
1 tsp Amchoor Powder
1/4 tsp Turmeric Powder, 1 tsp Red Chili Powder
salt to taste
::::To Temper::::
3 tbsp Oil
1/4 tsp Mustard Seeds, 1/2 tsp Cumin seeds, 1/4 tsp Asafoetida powder, 1/4 tsp Turmeric Powder, 4-5 Curry leaves
Chopped Cilantro for Garnishing

Method:
1) Wash and clean Okra with water. Dry with paper towel. Cut the tips off on both the sides. Slit each Okra from one side. Do not cut into two pieces while slitting.
2) In a bowl add Cumin Powder, Coriander Powder, Turmeric Powder, Red Chili Powder, Amchoor Powder and little salt. Mix all the spices well. Stuff this mixture in each Okra, also dust okra in this mixture. Reserve remaining Spice blend for later use.
3) Heat a nonstick pan. Add 3 tbsp Oil and wait until heated. Then add Mustard seeds, Cumin seeds, Asafoetida powder, Turmeric Powder and Curry leaves. saute for 5 seconds and add sliced onion.
4) Once Onion is half done, add stuffed Okra and saute gently, without spilling stuffed masala out. Stir well and lets Oil spread evenly over each okra. Turn the heat on Low. Cover with lid and let the Okra cook. Give a nice stir after 3 to 4 minutes which will avoid burning Okra at the bottom.
5) When Okra is almost cooked, sprinkle reserved Spice blend according to your taste. Also add little salt if needed.
Serve Stuffed Okra with Chappati

Dal Makhani

Dal Makhani in Marathi

Servings: 3 to 4

authentic Dal Makhani, Indian Dal recipe, Buttery Dhal, Punjabi Food
Ingredients:
1/2 cup Whole Urad (Black)
1/4 cup Rajma (Red Beans)
3 tbsp Ginger Garlic Paste
2 + 2 tbsp Butter
1 tsp Cumin seeds
1/2 tsp Turmeric Powder
Puree of 2 medium Tomato
1 tsp Garam Masala Powder OR Whole Garam Masala (2 cloves, 2 Cardamom, 1 bay leaf, 1 stick of Cinnamon)
1/2 cup Onion, finely chopped
2 tsp Red Chili powder
1 tsp Coriander Powder
1 tsp Cumin Powder
1/2 tsp Amchoor Powder
1/2 tsp Kasoori Methi
1/2 cup Milk
salt to taste

Method:
1) Wash and soak Urad and Rajma beans in water for 6 to 8 hours. In a pressure cooker add soaked beans and twice amount of water than soaked beans. Pressure cook to 4 whistles.
2) Take a deep saucepan. Put two tomatoes in it and fill the saucepan with water enough to cover tomatoes. bring it to boil. Boil for 2 minutes. You will see the skin of tomatoes have been cracked. Turn off heat. Remove tomatoes from the water. Let it cool down. Peel off the skin and remove seeds. puree this pulp of tomato by adding little water.
3) Heat a deep saucepan over medium heat.. Add butter and let it melt. Then add cumin Seeds, Turmeric Powder. [If you are adding 'whole garam masala' then add it now. stir for few minutes.]
4) Add Ginger-Garlic Paste, Red Chili Powder and saute until light brown in color. Add finely chopped Onion and saute until translucent. Now add Tomato puree and let it cook over medium low heat for 5 to 7 minutes, stirring occasionally. Cover with lid.
5) Add Coriander-Cumin Powder and stir well. Add Cooked Dal and mash a little. Pour a cup of water if needed. Boil over medium low heat.
6) If you have not added 'Whole Garam Masala, add Garam Masala powder, Kasoori Methi, salt to taste and Amchoor Powder. Add enough water to adjust the consistency, cover with lid and cook for 20 to 25 minutes over medium low heat. Stirring Occassionally.
7) Add 2 tbsp Butter and cook for more 10 miutes. After 10 minutes, add 1/2 cup milk and stir nicely. Cook over very low flame for 5 minutes.
Serve hot with Roti, Naan Bread or White Rice.

Note:
1) Use Heavy cream instead of Milk for more creamy texture.

Maharashtrian Masale Bhat

Masale Bhat (Indian Spiced Rice) - Marathi Version

Serves: 2 persons

Ingredients:
¾ cup Basmati Rice / Long Grain Rice
For Masala Mixture: 2 tsp Coriander seeds, 2 tsp Cumin Seeds, ½ cup Cilantro, 3-4 black Pepper,
4-5 Dry Red Chilies
6-7 Cashew Nuts
1 ½ tsp Maharashtrian masala (Goda Masala)
1 tsp Sugar
1 tsp Jaggery
2 tsp Oil
¼ tsp Mustard Seeds
¼ tsp Turmeric Powder
Salt to taste

1) Wash Rice and drain water.
2) Put the masala mixture ingredients into grinder. Grind to coarse powder.
3) Heat 2 tsp oil in a nonstick pan. Add Mustard Seeds, Turmeric Powder, Cashews and Rice, Sauté for 4-5 minutes. While sautéing rice, heat 2 cups of water on the other stovetop.
4) Once rice is nicely sautéed, add 2 cups of hot water. Lower the heat. Wait until rice starts boiling. Then add ground Masala mixture, Goda Masala, salt to taste, Sugar and Jaggery. Give a nice stir, cover with lid and let Rice cook on medium low heat.
While serving, Drizzle 1 tsp Ghee and sprinkle fresh grated coconut.

Pindi Chole Chana Masala

Pindi Chhole in Marathi

Servings : 2 to 3

How to make Pindi Chole, North Indian Food, Restaurant style food, Indian Restaurant
Ingredients:
3/4 cup dried Chickpeas
3 tbsp + 2 tsp Oil
1/4 cup Onion, finely chopped
2 tsp Ginger Paste
2 tsp Garlic Paste
2 Green chilies, slit verticallyChana masala gravy, Indian restaurant style Recipe
1 tbsp Coriander Powder
1 tbsp Cumin Powder
1/2 tsp Dry Mango Powder
1 1/2 tsp Red Chili Powder
1/2 tsp Turmeric Powder
1/2 tbsp Cumin Seeds
2 tsp Pomagranate Seeds Powder
1 medium Tomato
1 tsp Garam Masala
salt to taste
1 Red Chili Powder
For Garnishing:
2 tbsp Cilantro, finely chopped
few Onion rings

Method:
1) Soak 3/4 cup Chickpeas overnight or for 8 to 10 hours in the water. Pressure cook chickpeas to 4-5 whistles or until soft and tender. Do not overcook. Add some salt while cooking. Drain and reserve the water.
2) Heat a nonstick pan over medium heat, add and dry roast Cumin Seeds until dark brown in color. Transfer it to a bowl and dry roast Pomegranate seeds powder for couple of minutes. Transfer Roasted Cumin seeds and Pomegranate seeds powder to Mortar and Pestle. Crush and make a coarse powder.
3) Heat that same pan, add 3 tbsp Oil. Let it become hot. Add Green chilies, Turmeric Powder, Red Chili Powder, and Ginger-Garlic Paste. Stir nicely for around 30 seconds. Then add finely chopped Onion and let it cook until translucent and nicely done.
4) Once Onion is done, add Coriander powder, Cumin powder and Dry Mango powder. Add 1/4 cup reserved water. Bring it to boil over medium low heat for about 2 minutes.
5) Then add cooked Chickpeas and mix gently. Pour little reserved water if needed. Add salt and Roasted Cumin seeds and Pomegranate seeds powder mixture according to your taste. Also Add 1 tsp Garam Masala.
6) Add medium cubes of Tomato. Taste the gravy and add in some seasoning if needed. Cover the pan with lid and let it simmer for 2-3 minutes over medium heat.
7) Transfer it to serving plate. Heat 1 or 2 tsp Oil in a small saucepan, add 1 whole red Chili. Stir for few seconds and pour it over Chhole. Garnish with Cilantro and Onion rings.
Serve with Roti, Naan or even with white bread.

Vegetable Paneer Pizza

Vegetable Paneer Pizza in Marathi

Serves: 1 medium Pizza (Thin crust)

::Topping::
75 to 100 gram Paneer (12 to 15 medium pieces)
1 tbsp plain Yogurt
½ tsp Tandoori masala
½ tsp Ginger-garlic Paste
¼ to ½ cup Onion, thinly sliced
¼ cup Green Bell Pepper, sliced thinly
¼ cup Red Bell Pepper, Sliced thinly
½ to ¾ cup shredded Cheese

Paneer Topping
1) Make a mixture of 1 tbsp Yogurt + ½ tsp Tandoori masala + ½ tsp Ginger Garlic Paste and marinate Paneer pieces with this mixture. Set aside for 15 minutes.

Combining all the Items (Step by step Images)
1) Preheat oven to 480 F (250 C)
2) Spread Pizza sauce evenly over Pizza base
3) Then sprinkle little Cheese
4) Rub gently little salt to all cut vegetables. Spread these vegetables over Pizza base
5) Then add Marinated Paneer Pieces and sprinkle remaining cheese
6) Bake for 7-8 minutes or until surface become very light brown.

Paneer Kofta Curry

Ingredients:

¾ cup Onion Paste (Step 1)
½ cup Tomato Puree (Step 2)
1 tbsp Ginger-Garlic Paste
½ tsp Garam Masala
¼ tsp Turmeric Powder
½ tsp Red Chili Powder
1 tsp Coriander Powder
1 tsp Cumin powder
¼ cup Milk (whole Milk)
1 tbsp Oil
7-8 small Paneer pieces
Salt to taste
Garnishing:
1 tbsp Cilantro, finely chopped
3-4 Black Grapes, cut into half

Method:
First we are going to make Curry followed by Koftas. If we keep ready Koftas, they could get mushy.
::::Curry::::
1) Peel 2 medium Onions and pressure cook to 2-3 whistles. Grind to fine paste. We need ¾ cup Onion paste.
2) Pressure cook 2 big and juicy Tomatoes. Peel tomatoes, remove seeds and make purée.
3) Heat a wok or nonstick medium sized pan. Add oil and wait until oil is hot. Add Ginger Garlic paste and sauté about few seconds. Then add Turmeric Powder, Red Chili Powder and stir well. Add Onion paste. Lower the heat and simmer for 5 minutes.
4) After 5 minutes, add tomato puree and mix well. Add Coriander Powder, salt and give a nice stir. Lower the heat, cover pan and cook for few minutes. Add Garam Masala and mix. Again cover and cook.
5) Gravy is overall ready. Once Koftas are prepared, add milk to the gravy and simmer for 5 minutes on lower heat.

Simmer Curry on low heat, add milk and whisk gently. Cover the pan and cook for 5 minutes. After 5 minutes, add Paneer pieces.

Place Koftas in serving plate and pour required amount of hot gravy over Koftas. Garnish with Cilantro and Grapes. Serve hot with Naan, Roti or Chapatti.

साहित्य:
१ कप शिजवून किसलेला बटाटा (साधारण २ मध्यम)
१ टेस्पून कॉर्न फ्लोअर
१/४ ते १/२ कप किसलेले पनीर
२ टेस्पून बारीक चिरलेला कांदा
१० ते १२ मनुके/बेदाणे
१ टेस्पून काजूचे तुकडे
१ हिरवी मिरची
१ टिस्पून बटर
तळण्यासाठी तेल

कृती:
१) एका लहान कढई मध्यम आचेवर तापवून १ टिस्पून बटर घालावे.त्यात २ टेस्पून चिरलेला कांदा घालून तो ब्राऊन होईस्तोवर परतावा. नंतर त्यात बारीक चिरलेली हिरवी मिरची, काजूचे तुकडे, मनुके घालून १ मिनीट परतावे. शेवटी पनीर आणि मिठ घालून थोडावेळ परतावे आणि हे मिश्रण एका छोट्या वाडग्यात काढावे. थोडे कोमट होवू द्यावे.
२) शिजवून किसलेले बटाटे, १ टेस्पून कॉर्न फ्लोअर आणि थोडे मिठ एकत्र करून निट मळून झाकून ठेवावे.
३) बटाट्याच्या मिश्रणाचे साधारण १० गोळे करावे (१ इंच). प्लास्टिकच्या पिशवीला तेल लावून या मिश्रणाची पुरी लाटावी किंवा हातानेच मोदकासाठी करतो तशी पारी करावी. त्यात आवश्यक तेवढे पनीरचे मिश्रण मध्यभागी ठेवून पुरी सर्व बाजूनी बंद करावी. आणि हे कोफ्ते मध्यम आचेवर गोल्डन रंगावर तळून काढावे.

Hummus

Hummus in Marathi

Hummus Dip generally served with Pita bread. Click here for the recipe of Pita Bread.


Serves : 1/2 cup

Ingredients:
¾ cup cooked Chickpeas
1-2 Garlic flakes
1-2 tsp roasted Sesame seeds
1 tbsp Lemon Juice
¼ cup water
1 tsp Olive Oil (Note 1)
¼ tsp Black pepper
2 tbsp chopped Cilantro
Salt to taste

Method:
1) Put all the ingredients in a blender and blend it to fine thick paste. Refrigerate for few hours. Chill and serve with Pita bread.

Note:
1) I did not add Olive Oil as per traditional recipe, still it tasted good. So if you want to make Hummus dip more healthy and Oil free, don't use Olive Oil.

Tomato Sabzi

Tomato bhaji (Curry)

Ingredients:
2 medium Tomatoes, finely chopped
½ cup chopped Onion
1 tbsp Oil
For Tempering: ¼ tsp Cumin seeds, pinch of Asafoetida, 1/8 tsp Turmeric Powder, 2-3 Curry leaves
2-3 Green Chilies, finely chopped
½ tsp Ginger paste
1 tsp Jaggery
Salt to taste
1 tbsp Cilantro, for garnishing

Method:
1) Heat a wok; add oil. Let oil become hot. Then temper with Cumin seeds, Asafoetida, Turmeric, curry leaves and green chilies. Add Ginger paste and sauté for few seconds. Then put chopped Onion and sauté. Let it cook until translucent. Add little salt while sautéing Onion.
2) Once onion is cooked, add chopped Tomatoes and stir well. On medium heat, let the tomato cook.
3) Add Jaggery once Tomato is half done. Mix nicely and let it cook for a while. Add salt if required. Garnish with Cilantro
Serve Tomato curry with hot Chapatis.

Chinese stir fried vegetables with Rice

Chinese stir fried vegetables with Rice

Serves: 2 persons

Ingredients:
::::Rice::::
¾ cup Basmati Rice
1½ to 2 cup water
Salt to taste
1 tsp Oil
::::Vegetables::::
1½ to 1 ¾ cup mix vegetables (Carrot, Onion, Bell Pepper, Baby Corn, Cauliflower etc.)
I had used following vegetables:
½ cup Bell Pepper, sliced Lengthwise
¼ cup Baby Corn (1/2 inch pieces)
¼ cup Cauliflower (small florets)
¼ cup Carrots, thinly sliced (1 inch pieces)
6 to 7 thin slices of Potato (peeled)
¼ cup Onion, sliced lengthwise
--
1 ½ tbsp Soy sauce
2 tsp Vinegar
1 tbsp Cornstarch / Corn Flour
1 tsp Chili Sauce
1 tsp Ginger Paste
½ tsp Garlic Paste
2 dried red Chilies
1 tsp Oil
Sugar, Salt and Pepper to taste

Method:
1) Wash Rice with water and drain. Keep aside for half an hour. Then take a deep pan to cook rice. Add washed rice and water. Put in Oil and salt to taste. Give a stir and let the rice cook on medium heat. Do not cover with lid. Otherwise, rice could become sticky.
2) In a saucepan, boil 2 cups of water. Add Baby corn, Carrot, Cauliflower and potato slices and parboil these vegetables. Once vegetables are half cooked, drain the remaining water and reserve ½ to ¾ cup water for later use.
3) Heat a wok or any nonstick saucepan. Add oil and let it become hot. Then add Ginger-Garlic paste. Put in Red chilies and sauté for few seconds. Add onion and sauté for around 40 seconds. Do not cook Onion completely.
4) Then add Bell pepper fry for a minute. Add half-cooked vegetables and mix well. Also add Soy Sauce, Vinegar and Chili Sauce, give a nice stir.
5) Mix the reserved water and Corn flour together, and add it to fried vegetables. This will help to form nice thick gravy to stir fried vegetables. Then add salt, sugar and pepper to taste. Mix well
Serve hot with Basmati Rice. In addition, serve Sichuan Sauce along with Stir-fried Vegetables

1) If you are a fan of Tofu, add some while cooking.

Tawa Pulao

Tawa pulav in Marathi

Serves : 2 persons

Serve this spicy Tawa Pulao with Flavorsome Raita



Ingredients:
::::Rice::::
1 tsp + 1 tsp Butter
¾ cp Basmati Rice
1½ to 1¾ cup water
1 tsp salt
::::Masala::::
Carrots: 1/8 cup thinly sliced (1” pieces)
Bell Pepper: ¼ cup thinly sliced (1” pieces)
Cauliflower: ¼ cup, half cooked
Onion: ¼ cup finely chopped and 1/8 cup thinly sliced
Tomato: ½ cup finely chopped
Boiled and peeled Potato: 1/8 cup, 1/2 inch cubes
Steamed Green Peas: ¼ cup
1½ tsp Garlic Paste
½ tsp Cumin seeds
1½ tsp Red Chili Powder
2 tsp Butter
1 tsp Pavbhaji masala
Whole Masala : 1 small Cinnamon stick, 2 Cloves, 1 Bay leaf, 1 Cardamom
Cilantro for Garnishing

Method:
1) Wash Basmati Rice and drain water completely. Keep aside for 10 minutes. Then heat a nonstick pan (take a deep saucepan). Add 1 tsp butter and let it melt. Then add washed rice and stir for 2-3 minutes. Then add 1½ to 1¾ cup water. Add salt to taste. Turn the heat to medium low and let the rice cook uncovered. Stir occasionally. Once rice is done, transfer cooked rice to a bigger plate to cool down. Spread rice on the plate; let it cool down a little. The drizzle 1 tsp butter over it and gently spread it to all over the rice. Butter will help to make the rice grains separate from each other and it gives nice glaze to the rice. Do it very carefully, harsh handling could mash the rice grains and you will not get the desired texture of rice.
2) Then heat a nonstick Tawa over medium heat. Add 2 tsp butter; let it melt down. Then add Cumin seeds, Garlic Paste and red Chili Powder. Sauté for approximately 20-30 seconds.
3) Add Onion and sauté. Once Onion is done, add Bell Pepper and Carrots. Sauté for 2-3 minutes. Do not overcook.
4) Add Cauliflower, Tomato. Stir well and let it cook for 1-2 minutes. Add Green Peas, Potato and Pavbhaji Masala. Add salt to taste. Do not mash these vegetables as we do while making Pavbhaji. Because, we are going to make Pulao by using these vegetables.
5) Once this Masala Bhaji is done, place it to one side of tawa. Add ½ tsp butter on the empty space of Tawa, add Whole Masala to it. Saute for 10-15 seconds and mix it with the Tawa Bhaji. Then sauté for a minute. If we add whole Masala in the starting (with Cumin seeds), we would get overwhelming flavor of this Masala. To avoid it, we will add it at the end.
6) Heat this Tawa Bhaji over high heat. Add rice. Divide rice into 4 parts. Add one part at a time. Mix well and then add another one. It will help to spread Tawa Bhaji to entire rice. Stir well. Garnish with chopped Cilantro and serve hot with Raita.

1 cup Rice
2 Cups thinly sliced Cabbage
For Tempering: 2-3 tbsp Oil, ½ tsp Cumin seeds, ½ tsp Asafoetida Powder, 4-5 curry leaves, 2 green chilies
½ tsp Cinnamon Powder
1 pinch Mustard Powder
Salt to taste
2 ½ cups hot water

Method:
1) Wash rice with water and drain all the water. In a frying pan, heat 2-3 tbsp oil. Temper with Cumin seeds, Asafoetida Powder, curry leaves, 2 chopped green chilies, and Cinnamon Powder.
2) Add sliced Cabbage. Saute for 15 seconds, cover with lid for 20-30 seconds. Add washed rice. On medium heat, fry rice nicely for at least 7-10 minutes.
3) Add 2 ½ cups of hot water and stir well. Bring it to boil. Keep the heat on medium. Add salt to taste and mustard powder. Cover the pan with lid till rice gets cooked. If you find rice is not cooked, just add ½ cup hot water and give a nice stir. Serve hot with tomato soup and Papad.

Red Beans with Rice

Beans and Rice

I adopted this recipe from a diet magazine. I made changes to make it vegetarian .It is simple recipe and it's completely oil free.

Ingredients
1 cup dry red beans
1 garlic clove
1 bay leaf
1 all spice
1 medium size onion, chopped
1 medium size green pepper , chopped
1 tsp vinegar/ lemon juice
1 cup Rice
1 tsp salt
1 tsp black pepper

Method
1) Pick through beans to remove bad beans. Rinse beans thoroughly. Soak beans in water overnight.
2) Use Pressure cooker to cook beans with 2 quarts of water, 2 tbsp onion, 2 tbsp green pepper, garlic, all spice and bay leaf. Cook so that beans are tender, but not completely mashed. If you don’t want to use pressure cooker and slow cook the beans, then use more water and reduces heat. Cover and cook over low heat for about 1-1/ 2 hours or until beans are tender.
3) Stir and mash 1/4 of the beans against side of pan, to give some thickness to the bean and water mixture.
4) Add lemon Juice or vinegar and black pepper. Remove all spice and bay leaf. Cook uncovered, over low heat, until creamy. Serve over hot cooked rice. Garnish with the vegetables you like. Use Carrots, Onion, and pepper to make the serving colorful.

Veg Fried Rice

Veg Fried Rice in Marathi

Serving: 2 to 3
Time: 20 minutes to cut vegetables + 20 minutes to saute vegetables and rice

Ingredients:
1 cup Basmati Rice
4 cup
Vegetable Stock
1 Cup thinly Sliced cabbage
¾ cup Thinly Sliced Bell Pepper (lengthwise)
¾ cup finely chopped green onion
½ cup thinly sliced carrot (lengthwise)
¼ cup thinly sliced French beans (slanting pieces)
1½ tsp Ginger paste
1½ tsp Garlic Paste
2 Green Chilies
2 tbsp Soy Sauce
1 tbsp Vinegar
2 Tsp Oil
Salt to taste

Method:
1) Here is a recipe for
vegetable stock.
2) In a deep pan, boil 4 cups of vegetable stock. Add 1 cup Basmati Rice. Do not Cover the pan. On medium high heat, let the rice half-cooked (Cook upto 90%) (If you have made vegetable stock by using “Vegetable stock cubes” then add very little salt as it already includes salt.). Drain the water and gently transfer rice to flat plate and let it cool down. Apply little oil very gently. Be very gentle, rice grains should not break. (Note 1)
3) Heat 2 tsp oil in a wok. Keep the heat on high. Add chopped green chilies, Ginger-Garlic Paste and sauté. Put this mixture to cooked rice.
4) Sauté each vegetable separately (except Green Onion) on high heat for approximately 30 seconds. Do not add oil. Add 1 tbsp Soy sauce and little salt while sautéing bell pepper.1/2 tbsp soy sauce while sauteing cabbage and 1/2 tbsp soy sauce while sautéing carrot. Do not add soy sauce to rest of the vegetables. All vegetables will get flavored with Soy sauce, this will make easy to spread soy sauce all over the rice. At last, sauté green onion only for 10-15 seconds. Mix all vegetables in the rice.
Heat the same wok and put rice (including vegetables and fried ginger garlic paste), vinegar. Fry on high heat. Add salt if needed. You can add little Soy sauce while frying the rice to enhance the taste.
Serve hot with veg Manchurian.

Note:
1) If you are going to make fried rice in the evening then cook rice in the morning. Do the same according to step 2. Then cover that plate with another plate (upside down). Refrigerate for 3 to 4 hours. It will make the rice cold and keep the grains separate. This will make fried rice fluffy and not soggy.

Tamarind Rice

Tamarind Rice

Ingredients:
1 ¼ cup Rice
¾ cup Tamarind Pulp
3-4 Sandagi Mirchya (Dried Stuffed chilies)
2 Dry Red Chilies
2 tsp Red Chili Powder
1 tbsp Urad Dal
¼ cup Peanuts
For Tempering: 2 tbsp Oil, ¼ tsp Mustard Seeds, ¼ tsp Cumin Seeds, 1/4 tsp Asafoetida Powder, ½ tsp Turmeric Powder, 3-4 Curry Leaves
Salt to taste

Method:
1) Cook rice by adding double amount of water than rice (2 ½ cup). Rice should not be sticky. Let the rice cool down. Sprinkle salt to taste and red chili powder to the rice and mix gently.
2) In a wok, heat 2 tbsp oil. Temper with Mustard Seeds, Cumin Seeds, Asafoetida Powder, Turmeric Powder, Curry leaves. Add broken Red Chilies, Sandagi Mirchi, and Urad dal. Stir untill urad dal becomes golden brown. Then add Tamarind Pulp. Stir nicely. After 15-20 seconds, add cooked rice and mix well. Cover with lid and let it cook for 2-3 minutes on medium heat.

Schezwan Fried Rice

Schezwan Fried Rice in Marathi

Ingredients:
¾ cup white Rice (Basmati or any other long grain)
¾ cup Onion, sliced lengthwise
4 Spring Onion, finely chopped (keep 2 tbsp aside for garnishing)
¾ cup Cabbage, sliced thinly lengthwise
¼ cup Carrot pieces (1 inch)
¼ cup French Beans (half cooked or use frozen)
1 tbsp Soy sauce
1½ tsp Vinegar
Schezwan Sauce as per taste
1 tbsp Oil
Salt to taste

Method:
1) Rice: heat a saucepan; add 2 to 2¼ cup water, ½ tsp Oil and 1 tsp salt. Give a nice stir and add ¾ cup Rice. Cover and let Rice cook on medium heat. Once rice is done, drain remaining water. Transfer Rice to a flat plate to cool down.
2) Add all the vegetables in a bowl except Spring Onion. Add Schezwan sauce a mix well.
3) Heat a nonstick pan; add 1 tbsp Oil. Keep the heat on medium. Stir-fry marinated vegetables for 2 minutes. At the end, add spring Onion. Sauté for 15 seconds; and remove pan from heat. Transfer vegetables to a bowl otherwise it could get burn.
4) Heat the same frying pan; add 1 tbsp Schezwan Sauce. Add rice and mix well until Schezwan sauce spread all over the rice. Add salt if needed. Add Vinegar and Soysauce. Toss nicely.
5) Add stir-fried vegetables and mix finely. Fry for 2 minutes over high heat.

Note:
1) If Possible, use Iron Wok instead of nonstick pan as it holds the high heat very well and it gives nice flavor.
2) Schezwan sauce has enough Garlic to give garlic flavor to Schezwan Rice. However, if you want more Garlic Flavor, add 3 to 4 finely chopped Garlic cloves while stir-frying vegetables.

Vegetable Biryani

Vegetable Biryani in Marathi

1 cup Basmati Rice
2 medium Onion, sliced lengthwise
½ cup Peas
5-6 Florets of Cauliflower
½ cup Carrot and French beans pieces (Add other veggies of your choise)
Puree of 2 medium Tomato (boil tomatoes in hot water until starts leaving skin. Peel and purée)
8-9 Cashew Nuts
1 tbsp Garlic Paste
1 tbsp Ginger Paste
½ cup Milk
¼ to ½ cup Plain Yogurt, well beaten
1 tbsp Ghee
½ tsp Red Chili Powder
¼ tsp Turmeric Powder
1 tbsp Vegetable Biryani Masala
Salt to taste
2 tbsp Oil

Method:
1) In a deep saucepan boil 2½ cup water. Add ½ tbsp Oil and ½ tbsp Salt. Then add 1 Cup Basmati Rice. Let it cook on Medium heat. Cover with lid for few minutes. Do not cook rice completely. Let it be uncooked slightly. Drain and transfer rice to a flat plate for cooling.
2) Cook vegetables. Do not overcook them, Keep them uncooked slightly.
3) Heat a nonstick pan; add 2-3 tbsp oil and sauté Onion, Cashew nuts, Ginger-Garlic Paste. Sauté for 2 minutes on medium heat. Then add Tomato Puree, ½ tsp Red Chili Powder, ½ tsp Turmeric Powder. Cover and cook for 2-3 minutes. Then add Yogurt, Biryani masala and mix well. Then add cooked vegetables and very little salt. Let it cook for few minutes.
4) In other pan spread rice and make a layer. Then make layer of gravy. Again make Rice Layer followed by layer of Gravy. Make 3-4 more layers like this.
5) Pour ½ cup milk over the surface. Cover pan with lid and let it cook for 10-12 minutes. Keep the heat on medium. Once Biryani is ready, drizzle Ghee over Biryani to enhance richness.

Note:
1) To make Biryani in the Oven, preheat oven to 400 F. Grease an oven safe container. Layer rice and gravy in Oven safe container as explained in step 4 & 5. Cover with lid (Oven safe) or Aluminum Foil. Keep the container for 15 minutes in preheated oven.
