Homemade Pizza base

Pizza Base Recipe in Marathi

Pizza, Mozzarella Cheese, Vegetable Pizza Recipe, Indian style Pizza, Cheese Pizza

Serves : 1 Thin Crust Pizza Base

Ingredients:

¾ cup Maida (All purpose Flour)
1 tsp Dry Yeast
½ tsp Sugar
½ tsp salt
¼ cup lukewarm water
Little flour to roll Pizza

Method:
1) Take 2 tbsp lukewarm water in a bowl. Dissolve ½ sugar and then 1 tsp dry yeast, mix well. Cover the bowl and stand aside for 10 minutes. Mixture will become frothy within 5-10 minutes.
2) In a mixing bowl add ¾ cup Maida flour, salt, pour frothy mixture and little oil and start kneading. Add lukewarm water little by little and knead the dough for atleast 7-8 minutes. Dough should be smooth and elastic. Grease the dough with oil and put into a deep glass bowl. Cover bowl with plastic wrap and keep in warm place. Set the dough aside for 1 ½ hour to rise.
3) Once the dough rested, it becomes double in size, put it on rolling board. Preheat oven to 480 F (250 C). Knead and punch the dough to remove air bubbles. Use little oil or flour to avoid sticking.
4) Sprinkle little dry flour over rolling board and roll the dough into 1 cm thick circle. Prickle with Fork to avoid puffing the pizza while baking. Brush very little oil on the surface of Pizza.
5) Bake Pizza base for 6-8 minutes.

Hummus

Hummus in Marathi

Hummus Dip generally served with Pita bread. Click here for the recipe of Pita Bread.


Serves : 1/2 cup

Ingredients:
¾ cup cooked Chickpeas
1-2 Garlic flakes
1-2 tsp roasted Sesame seeds
1 tbsp Lemon Juice
¼ cup water
1 tsp Olive Oil (Note 1)
¼ tsp Black pepper
2 tbsp chopped Cilantro
Salt to taste

Method:
1) Put all the ingredients in a blender and blend it to fine thick paste. Refrigerate for few hours. Chill and serve with Pita bread.

Note:
1) I did not add Olive Oil as per traditional recipe, still it tasted good. So if you want to make Hummus dip more healthy and Oil free, don't use Olive Oil.

Pita bread recipe

Pita bread in Marathi

Ingredients:
¼ cup All purpose Flour
1 tsp Active Dry Yeast
3 tbsp lukewarm water (Note 1)
½ tsp Salt
½ tsp Sugar
1 tbsp Olive Oil

Method:
1) Take lukewarm water in a small bowl. Dissolve ½ tsp Sugar in it. Then add and dissolve Active Dry Yeast in that water. Cover and let it stand for 10 minutes or until mixture become frothy.
2) In a bowl, take All purpose flour. Add salt and mix together. Add yeast mixture to all purpose flour and mix with hands. Add little more lukewarm water if needed. Knead to smooth and elastic consistency. Use little oil to avoid sticking dough to hands.
3) Apply little oil to the dough to evade from drying and put it in a bowl. Cover the bowl and place it in warm place for about 1 hour to rise.
4) After an hour dough will rise to double in size. Punch down the dough to remove air bubbles.
5) Preheat oven to 450 F. Punch the dough and roll it out to ¼ inch thick circle. Try to gently brush off dry flour on rolled out bread. Try to keep the surface plain and not bumpy, this will help to puff up the bread.
6) Brush little Olive Oil on the rolled out dough. Put it on baking sheet and bake for 3-4 minutes. Then remove from oven, turn the side and bake for 2-3 minutes.
Serve hot Pita bread with chilled Hummus Dip.

Note:
1) Yeast should be dissolved in warm water (100-110 degrees F), but not hot water or it will die.

Short Bread (Nankhatai)

5 tbsp Unsalted Butter
1/4 cup Sugar (Superfine)
1/2 cup All Purpose Flour
1/4 cup Rice Flour
1/8 tsp Baking Powder
Pinch of salt

Method:
1) Sift All Purpose flour, Rice flour, Baking powder and salt five times.
2) Put soft butter in bowl and add sugar to it. beat them with Hand mixer until the mixture become frothy and smooth (approximately 8 minutes).
3) Now preheat oven at 325 degree F. Add sifted flours slowly to frothy butter mixture and mix well. Remove lumps. Mixture should be soft and light.
4) Grease an ovensafe container (Pie bakeware). Put Short Bread Mixture in it and make 1/2 inch layer, spread the dough evenly. Make the surface plain.
5) Using a sharp knife, give shallow marks gently without disturbing the dough and cut in any shape you prefer. When we bake short bread dough, it will become hard and crispy. If we cut short breads after baking it will crumble while making pieces.
6) Bake about 30-35 minutes or until color changes to light brown. Remove from oven and cool to the room temperature.
7) Using sharp knife start cutting gently, where you had made marks on the dough. Separate the pieces.

Samosa Puff

Samosa Puff in Marathi

Ingredients:
Refrigerated Crescent Rolls
For stuffing:
2 boiled potatoes
1 cup cooked Green peas
3-4 hot green chilies
1 tbsp Garam Masala
1 tsp Amchoor Powder
1 tsp Coriander Powder
1 tsp Fennel Seeds
1-2 tbsp Oil
For Tempering: ¼ tsp Mustard Seeds, ¼ tsp Cumin Seeds, ¼ tsp Turmeric Powder
4-5 Curry Leaves
Salt to taste

Pillsbury Crescent Roll, Samosa Puff, Puff Pastry, Spicy Pastry recipe, Stuffed roll

Method:
1) Peel and mash the potatoes.
2) In a nonstick pan, heat 2 tbsp oil. Temper with Mustard seeds, Cumin seeds, Turmeric Powder and curry leaves. Add Fennel Seeds and chopped green chilies. Put steamed Peas. Stir for 1 minute.
3) Then put mashed potatoes, Garam Masala, Coriander Powder, Amchoor Powder and salt. Mix very well.
4) Generally, there are eight triangles of dough. Separate each triangle gently. Put 1 tbsp of stuffing on the smaller side of the triangle and make rolls.
5) Preheat oven to 370 degrees F. Bake the rolls 15 to 18 minutes.
Serve hot with Tamarind Chutney or Green Chutney.

Note:
1) You can prepare any stuffing of your choice.
2) Add Chili paste for more hotness in stuffing.

Cucumber cake

Cucumber cake

Ingredients:
2 cups peeled and grated cucumber (Method step 1)
1 cup Semolina
1 cup Jaggery
4 to 5 tbsp unsalted Butter
1 tbsp Pure Ghee
1 tsp Cardamom Powder
1 tbsp Almond pieces

Method:
1) Peel and grate Cucumber. Squeeze shredded cucumber and remove all the water. We need 2 cups of squeezed cucumber.
2) In a nonstick pan, add 1 tbsp Ghee and Semolina. Fry until color changes to light golden. Temporarily, transfer Semolina to other plate.
3) Add 4-5 tbsp butter to the nonstick pan. Let it melt. Once butter melted; add semolina, Jaggery, and shredded Cucumber. Keep stirring for 5-10 minutes. After 5-10 minutes, the mixture will thicken. Add Cardamom Powder once mixture becomes thick.
4) Preheat Oven to 375 Degrees F. Grease baking pan (Cake pan or bakeware Pie pan) with Ghee. Pour the mixture. Spread evenly and make 1-inch layer. Sprinkle Almond pieces. Bake for 15-18 minutes or until edges become light brown.
5) Remove from oven. Cut into squares.

Note:
1) It tastes great when it is warm. So if there is leftover cake. Heat it for few seconds in microwave while serving.
2) After baking, pour little Fresh Coconut milk over the cake to enhance the taste.

Mix Baked Vegetable

Mix Baked Vegetable in Marathi

Serves: 3 to 4 persons

1 cup boiled and peeled potato cubes
½ cup thinly sliced Onion
¼ cup Carrot cubes
¼ cup French beans (1 inch pieces)
¾ cup half-cooked Green peas + Corn
½ cup Bell pepper, sliced lengthwise
Tomato Puree of 2 tomatoes
(Boil and peel tomatoes. Do not add water. Add 2 garlic cloves and purée)
8-10 Cashew nuts
3-4 curry leaves
2 dry red Chilies
1 tsp Garam Masala
2 tbsp butter
Salt to taste
3 tbsp chopped Cilantro
1 tsp lemon juice

Bake Potato cubes, Carrot cubes, half of the sliced Onion, French beans, and Bell pepper to 350o F for 13 to 14 minutes or until vegetables become golden brown. Baking gives nice flavor to vegetable.

Method:
1) Heat a nonstick pan over medium heat. Put butter and let it melt. Add Curry leaves, remaining sliced onion and Cashew nuts. Sauté until onion become translucent. Add red Chilies and baked vegetables.
2) Cover pan with lid and let the vegetables cook for couple of minutes over medium to medium low heat. Add Garam masala, Tomato puree and mix well. Cover and cook for 2-3 minutes. Add green Peas and Corn, cover and cook for 2-3 minutes. Add salt and sprinkle chopped cilantro, and lemon juice.
Serve hot with Naan, Roti, Chapati or even with slice bread.

Mint potato balls

Mint potato balls in Marathi

Time: 40 minutes
serves: 15 Balls

2 potatoes (Boiled and peeled)
1 cup grated cheese (Mexican cheese blend)
Paste of 7-8 Mint leaves and 4-5 green chilies or chop them finely
2 tbsp Butter
1 tsp Corn Flour
Salt and pepper to taste

Method:
1) In a mixing bowl add all ingredients, mix, and make dough. Cover with lid for 20 minutes.
2) Add more butter if needed. Make 1-inch balls of this mixture. Bake these balls over 350 F for 7-8 minutes. Once the color changes slightly, remove from oven. Keep these balls aside for 20 minutes to cool down.
3) After 20 minutes, deep fry balls in oil to Golden brown color.
Serve hot with mint chutney or Tomato ketchup as an Appetizer.
